Chocolate Marzipan Ice-cream Yes, I finally made it and it turned out delicious. If you’ve ever tried the Marzipan chocolate by Ritter Sport, this ice cream tastes just like it. I followed the recipe by bbc food as a reference. Here’s my recipe:
- 2% milk 2 cups
- Heavy cream 1/2 cup
- Sugar 1/2 cup
- Pure Almond Paste 1 tin (small)
- Cocoa 2 tbsp
- 100% cocoa Dark chocolate 2 pieces (chopped into small pieces)
- Place all the ice cream ingredients (except the chocolate) into a food processor and blend well. Pour into a pan and heat over a medium heat until the mixture reaches 90C/180F on a sugar thermometer (or just starts to boil). Add the chopped chocolate.
- Allow the mixture to cool, then pour into an ice cream mixture. Churn and freeze according to the manufacturer’s instructions.
I am proud of myself because for the first time I had the confidence to vary an ice-cream recipe and this is only my third batch of ice-cream since I got the ice-cream maker. First one was a disaster (did not follow instructions), second one - I was blown away (the taste, texture were amazing) and this one …makes me proud :)
