On saturday morning, as I was just getting up, I decided to cook the Acorn Squash. So how do I cook it? What do I cook it with? A few seconds later, I found myself surfing through 100’s of recipes on the foodgawker app. I love orange and when I came across this recipe of acorn squash with orange quinoa, I knew that’s what we were having for brunch today. I followed the recipe with a few variations. - I used fresh orange juice - I sautéed sage and onions in butter and added the quinoa to it. (did not use garlic, celery, thyme) - Did not add the maple syrup. The squash itself has the sweetness that perfectly compliments the salty quinoa.
